In February, we were delighted to host Michelin star Chef Xavier Mathieu and his Le Phebus Hotel & Spa culinary team of Mattia Pesarin and Javiera Rioseco. Chef Xavier’s restaurant and hotel is located in the beautiful village of Joucas, France which is situated in the Luberon Valley of Provence. For The Applewood Manor team, we were lucky to watch, participate and enjoy their cuisine and wonderful company for a week. On February 18th and 19th, our guests enjoyed two incredible tasting menus paired with legendary wines. Applewood’s wine advisor, Todd Mathis of DNS Wines, was our sommelier for the weekend and everyone deeply appreciated his extensive knowledge. Many of the dishes executed by Chef Xavier and his team were conceptualized over the course of their time at Applewood and featured local ingredients from Sunbrust Trout Farms, Mills River Creamery, Hickory Nut Gap and Three Graces Dairy, and many local fresh markets. But the bottom line is that I am certainly not writer enough to do justice to the experience. Without further ado then, I’ll let the pictures do the talking.
