We are delighted to welcome back Michelin star Chef Xavier Mathieu of Le Phebus Hotel & Spa in the Luberon Valley of Provence, France. Join us for two exceptional Michelin star quality multi-course tasting menus paired with rare and fine wines. Guests staying at The Applewood Manor ideally attend both dinners as pricing is all-inclusive. For guests not staying at Applewood Manor, we have a limited number of “seats at the table.” We can accommodate up to 16 guests per night. Applewood Manor guest chef events are truly an exceptional value and unmatched in Asheville considering the haute cuisine experience and rarity of the wines served.
Wine pairings will feature wines from Bordeaux, Burgundy, Barolo, the Rhone Valley as well as California’s Napa Valley and Sonoma appellations .

Born and raised in Marseille, Xavier Mathieu is a true-blue Provençal lad. He was introduced to the world of gourmet cuisine by a family friend, master chef, the late Roger Vergé and finished his apprenticeship with Joël Robuchon in Paris before returning to this splendid family home in the heart of the sweet-scented scrubland of Luberon. Xavier, who sports a distinctive white shock of hair, breathes new life into Provençal traditions and each dish offers a new twist on his roots. Pistou, beans, garlic and basil soup; leg of lamb baked in hot Garrigue sand: his recipes are surprising, highly personal, and influenced both by his region and travels to distant lands (jambalaya of crayfish tails, sweetcorn and potatoes). To be sampled in the swish exclusive setting of a refurbished drystone farmhouse whose foundations date back to the Order of the Knights Templar of Malta.
Fun fact: Applewood owners Stephen and Robin Collins dined at Vergé’s iconic restaurant Moulin de Mougins on their 5th wedding annivesary.
Chef also owns and operates our favorite hotel and restaurant anywhere, Le Phebus Hotel & Spa. Located between Roussillon and Gordes, Le Phébus is a mas, steeped in history, where the rooms overlook the tranquil water of their private swimming pools. Rebuilt on remains dating back to the medieval knights of the Order of Malta, this is a jewel of a hotel and the perfect place to take shelter when the mistral wind blows across the garrigue. Its location is ideal to explore the Luberon, and the Carita Spa is the perfect place to relax with treatments based on lavender essential oils. In the restaurant, the traditional cuisine breathes new life into ancient Provencal recipes and offers a superb “soupe au pistou”, a regional vegetable soup with garlic and basil.
